# Dacor oven bakes unevenly or at the wrong temperature

### What to do in the next ten minutes

Put an oven thermometer at rack height in the middle of the cavity and preheat to 350 °F. Read it at the beep and again twenty minutes later — the difference between those two readings is as useful as either of them. Note whether food browns unevenly front to back or top to bottom. Check that the door closes squarely and that the seal is in contact all round.

### Why the appliance cannot tell you

An oven’s self-diagnosis compares what it is doing against what its own sensor reports. If the sensor is the thing that has drifted, everything agrees with everything and the oven declares itself well. Only a measurement from outside that loop catches it, which is why we ask for a thermometer reading rather than a description of the cake.

### The era question, again

A Classic ERC cavity reports a shorted sensor as F3 and an open one as F4. A Modernist cavity reports both as C-20. Neither table applies to the other machine, and a code read from the wrong one produces a confident wrong answer. Establishing the age of the oven takes one question and prevents that entirely.

The temperature sensor has drifted

Sensors age, and a cavity that reads itself warm will under-bake everything while insisting it is at temperature. This is the commonest cause and is corrected by calibration or by a part.

The door is no longer sealing

A hinge that has settled lifts the seal along the top edge, and the cavity then loses heat continuously at one end. It presents as uneven browning long before anybody suspects the door.

An element or the convection fan is failing

A partly failed element heats but not evenly, and a convection fan that has slowed leaves the cavity behaving like a conventional oven that nobody asked for.

Log a preheat and a hold

Two readings twenty minutes apart. Overshoot and settling band are the diagnosis.

Note the pattern of the unevenness

Front to back is usually airflow or the door. Top to bottom is usually an element.

Check the door seal by hand

Paper drag at the corners and along the top edge, which is where wall ovens fail first.

Everything is browner at the back, or nothing browns at all

### Can I just adjust the offset?

On most of these ovens there is a calibration offset, and where the cavity is steadily wrong by a consistent amount that is a legitimate fix. Where it swings, an offset hides the problem and makes it harder to find later.

### The oven is old. Is it worth calibrating?

Usually yes. These are heavy, well-built cavities and a sensor is an ordinary part. What we check first is whether the part exists for that generation, and we say so before booking.
